One cook session, seven dinners, and a shelf for the hungry adult

Two adults, three children aged nine, five and one. The goal is plain: cook once a week, eat well the other six days, and still have a choice at seven in the evening. Meal prep has failed in this house before, and each failure had a name. This version answers each name with a mechanism, then lays out the first week to the gram, and ends with what an adversarial check found wrong in the research before the first pot went on.

The gap

Five ways it failed before, in our own words

Before any research, one question: why did it not work last time? The answer came back as five sentences. They are the specification.

"Forgetting about what is available." A prompt failure, not a discipline failure. The fix is an inventory that reads at a glance: a checklist on the phone, one line per batch, and a label on every container.

"Not having what I wanted." Choice architecture. Full meals in the freezer give one option per box. Components give a menu.

"Wasn't enough for the family." Portion math with a buffer, then measured against what was thrown out.

"Different people wanted different things." The same components, assembled differently per plate. Nobody gets a different dinner; everybody gets a different bowl.

"I didn't follow through. My wife was not onboard." A fixed slot, shopping done the day before, a 25-minute minimum session for bad weeks, and the plan decided by both adults with the labour split written down.

The shape

Components for choice, plus a finished shelf for speed

Two kinds of thing come out of the cook session, and they answer two different needs.

The component matrix. Three proteins, two legume dishes, two grains, three sauces, two vegetable trays. Any grain plus any protein or legume plus any sauce is a meal in fifteen minutes. That is where the choice lives.

The finished-meal shelf. Six to eight single portions of a complete meal, in microwave-safe boxes, five minutes from frozen. These exist for one person: the adult who works from home and gets hungry at lunch and again at eleven at night. If this shelf runs empty, the whole system fails loudest.

Pareve components are the flex layer.

This kitchen keeps meat and dairy out of the same meal. Legumes, fish, eggs, grains, vegetables, tahini, tomato sauce and a coconut curry base pair with either side, so they are batched first and labeled P. One tomato-sauce batch stays plain and is marked "no meat" so it never gets locked to one side by accident.

Two weeks of food is the target. The freezer decides when.

The house has a two-shelf fridge freezer, roughly 80 to 150 litres. Nobody in the research reconciled "prep for two weeks" with that number until the verification pass did. So the target is seven days plus a full finished shelf, with a note each week of what did not fit. After two measured weeks that note, not a litres-per-person rule from a calculator site, sizes the second freezer: an upright with drawers, so a child can find things.

The plates

The children's protein minimums are cleared by one schnitzel or half a cup of lentils. Quantity was never the constraint; acceptance is. So the bank leads with what they already eat: lentils, beans, schnitzel, burgers, chicken, fish. Healthier versions of the same things, not different things.

Week one

Thirteen dishes, four stations, two hours

Oven, induction hob with two rings, an outdoor grill with an air-fryer basket, and a stand mixer. Two cooks. The two children who can help take the washing, tearing and breading station for the first twenty minutes.

The finished shelf is assembled from these, not cooked separately: four shawarma, rice and roasted-vegetable bowls in boxes, and four single portions of lentil soup. Eight portions, no extra pots.

The two hours, in order

0-10

Oven to 200°, vegetable tray in. Pot 1: lentil soup starts. Children wash and peel carrots and tear parsley.

10-25

Mixer: burger mix, eight patties, out to the grill. Pot 2: onions fried, lentils and rice in for majadra. Children set up the breading line, flour, egg, crumbs.

25-45

Schnitzel breaded with the children, onto a tray, into the freezer raw. Shawarma thighs marinated and onto the grill after the burgers.

45-60

Vegetable tray out, frittata muffins in. Pot 1 is free: tomato sauce, twenty minutes. Half stays plain; half gets peppers and becomes shakshuka base.

60-80

Pot 2 is free: white rice. Tahini in the blender. Soup into shallow trays to cool fast.

80-100

Four bowls assembled for the shelf. Pasta eight minutes in pot 1 after the sauce. Grill: vegetables.

100-120

Cool, portion, label, load. Banana oat pancakes only if there is time left at minute 100. There will not be.

The week that follows

Dinners
  • Sunday: shawarma, rice, grilled vegetables, tahini

  • Friday lunch: pasta and whatever is left; Friday dinner is not in the plan
  • Saturday lunch: schnitzel or burgers from the freezer, air fryer
Everything else
  • Lunchboxes: frittata muffins, cold schnitzel in pita, pasta in sauce, majadra
  • The adult's lunch at home: a shawarma bowl, five minutes
  • Eleven at night: lentil soup, four minutes
  • The one-year-old: her portion out of every pot before salt, in a small box
The freezer

Two safety numbers, one exception, one label

Almost everything written about freezing is about quality, not safety. The safety part is short.

Do not freeze the finished version of five things.

Raw salad, cooked potato chunks, cream or yogurt sauces, pasta already in its sauce, and cooked eggs. Each goes grainy, watery or rubbery. Freeze the parts and finish fresh: the shakshuka base without the eggs, the pasta beside its sauce, the herbs added after reheating. Breaded things go back through the air fryer, never the microwave.

Three kinds of container, no more.

Flat zip bags for soups, sauces and pulled meat: press the air out, freeze flat, file upright like books. Silicone portion trays for exact cubes of grain, sauce and child portions. Glass or microwave-safe boxes for the finished shelf. Foil pans for anything that goes through the oven. The branded portion trays do not ship to Israel; any silicone muffin tray does the same job.

The label, four fields, in this order

Name · date · portions and for whom · how to reheat. Written on painter's tape in marker. A tired parent or a nine-year-old must be able to act on it without asking anyone. Every box also carries M, D or P.

The inventory is a checklist on the phone, one line per batch, ticked off when a batch is finished and extended after every cook session. The label is the fallback for whoever is standing at the freezer without a phone. Between the two, failure number one is closed.

Grouped the way a shop is walked. Quantities are for the thirteen dishes above, two adults and three children, seven days plus the shelf. Spices only where the jar is empty.

The check

What a verification pass found before anything was cooked

Four researchers wrote the freezing method, the system design, the nutrition targets and the recipe bank in parallel. A fifth was given one job: find what is wrong or contested, and fetch the sources rather than trust the citations. It found enough to matter.

"Verified" usually meant the page exists.

Of eight sources spot-checked by fetching them, three were clean, one was dead, three were real pages cited for a number they do not contain, and one was scoped to the wrong age group. The lesson generalises past food: a research pass that reports its sources as verified has usually verified existence, not content. The pass that reads them has to be a separate job with a separate incentive.

Still open

Every "the children will eat this" beyond the seven foods they named is a guess by format. The tested list starts after Sunday. A weekly voice note answers three questions, what was thrown out, what was asked for again, what nobody touched, and next week's quantities move on the first answer and the menu on the second.
